Eating a healthy diet does not have to be overly complicated. While some specific foods or nutrients have been shown to have a beneficial effect on mood, it’s your overall dietary pattern that is most important. The cornerstone of a healthy diet pattern should be to replace processed food with real food whenever possible. Eating food that is as close as possible to the way nature made it can make a huge difference to the way you think, look, and feel.

Chef Rumbie shares a simple delicious diet recipe you can try…

Watercress, Mango, Egg & Bacon Salad

3 boiled eggs cut in half
4 handfuls of watercress washed & drained
200g of crispy fried bacon, cut into bits
1 handful of mint
1 handful of flat leaf parsley
1/2 of a not too ripe mango
100g of cheddar, cut into cubes
1 finely Sliced red onion
6 thin slices of cucumber
1 tablespoon of raisins

*Layer the greens first, sprinkling red onion in between sections and placing Cucumber right in the bottom section. Sprinkle the cooled bacon bit and tuck the egg halves. Stick the mango, cheese in at the end and finish with the raisins.

1 tablespoon of olive oil
1 teaspoon of wholegrain mustard
1 teaspoon of red wine vinegar
1 teaspoon of low sodium soya sauce
1 teaspoon of garlic and chili oil paste
Crack of black pepper

*Combine & drizzled over the salad. Making sure not to over dress it.
