Pan-fried Spicey Prawns, served with Steamed Jasmine Rice, Spinach Salad with Home-Made Blue Cheese Dressing
I love this dish, mainly because prawns are one of my favourite things, I would literary have them every day. God knew what he was doing when he put me very far from the sea. Spinach is high in iron especially perfect for me personally because I lack sufficient iron; this would be the best way to have fresh baby spinach. It is also a quick meal and takes less than 35mins to make.
SERVES – 4
STEAMED JASMINE RICE
1-Cup of Jasmine Rice
2-Cups of Lukewarm Water
1-Tspn of Cooking Oil
Pinch of Coarse Salt
*Add everything to a sauce pan and bring to the boil. Simmer over medium-low heat for 15-25mins, until cooked and fluffy.
BABY SPINACH SALAD & HOME-MADE BLUE CHEESE DRESSING
5-Finely Sliced Bacon Rashers. (Crispy Fried & Cooled)
A packet of Baby Spinach. (Washed & Drained)
Handful of Roughly Chopped Red Cabbage
Handful of Baby Corn
1-Avocado Cut into Squares
270ml-Plain AB. Cultured Yogurt
*Mash the cheese into a smooth paste and slowly add the yogurt. Making sure to mix thoroughly and refrigerate.
*Add all ingredients to a large bowl and toss lightly taking care not to break up the Avocado. Drizzle dressing over salad when serving.
PAN-FRIED SPICEY PRAWNS
1-Tspn of Smoked Paprika
2-Finely Grated Garlic Cloves
1/4-Tspn of Freshly Ground Black Pepper
1/4-Tspn of Freshly Ground Ginger
1-Red Jalapeño Paste
1-Zest of A Lemon
Himalayan Pink Salt
1-Tbspn Canola Oil
Drizzle with lemon juice just before serving.
*Shell and clean prawns. Do not wash prawns.
*In a clean bowl place the prawns and add the rest of the ingredients. Leave to sit for 3mins.
*Oil grill pan & heat slowly over medium-high heat.
*Fry/Grill for 2-3mins on each side. (Until the prawn gets pale white towards the middle, then turn it over to cook the other side)
*Remove from heat and serve immediately with a drizzle of freshly squeezed lemon juice.
Substituting Chicken Breast or Steak if you are anti-sea food is a great go to as well.
